Comfort Food! Perfect For This Chilly Weather!<3

Chicken Enchilada Soup (Wannabe Chilis Style)

Preparation time: 20mins
Cooking time: 20 mins
Serves: 14

Ingredients:

1/2 cup Vegetable oil
1/4 cup Chicken Bouillon
3 cups diced Yellow Onions
2 teaspoon ground Cumin
2 teaspoon Chili Powder
2 teaspoon granulated Garlic
1/2 teaspoon Cayenne pepper
2 cup Masa Harina
4 quart Water (divided) 3 & 1
2 cup crushed Tomatoes
8oz Velveeta Cheese cut in small cubes
3 pounds cooked, cubed chicken Breast
Shredded Cheddar Cheese
Tortilla Strips
Pico De Gallo

Instructions

In large pot, place oil, chicken bouillon, onion and spices. Saute until onions are soft and clear, about 5 minutes.
In another container, combine Masa Harina with 1 quart water. Stir until all lumps dissolve.
Add to sauteed onions and bring to boil. Once mixture starts to bubble, continue cooking 2-3 minutes, stirring constantly. This will eliminate any raw taste from Masa Harina.
Add remaining 3 quarts water to pot. Add tomatoes; let mixture return to boil stirring occasionally.

Add cheese to soup. Stirring til Cheese is melted.
Add chicken; heat through.

Ladle Into Large Soup Bowls!
Top With Shredded Cheddar Cheese, Tortilla Strips & Pico De Gallo!
Enjoy!

Makes 1 1/4 gallons or 14 servings.

Note:
You must dissolve the masa harina into 1 quart of water completely.
If you add the masa harina into the soup directly it will be difficult to mix in and may be lumpy.

Halloween Footprints 



I had all this stuff just sitting around!
  • Sketch Pad Of Paper
  • Acrylic Paint
  • Black Spray Paint
  • 10" Pizza Box (Small Pizza)
  • Glue Gun
  • Hot Glue Sticks
  • A Shoe Lace
  • Buttons
  • Halloween Ribbon 
  • A Pencil
  • A Sharpie Marker
  • Scissors
  • 8x10 Picture Frame 
  • Tape


The first set I did was my son Jakobs feet! I painted them with acrylic paint like a Candy Corn, ripped out a piece of my sketch paper, Stamped his feet on the paper, let it dry and got out my Sharpie and wrote, Trick-or-Treat Smell-My-Feet in-between the footprints. I wrote his name and the year in the bottom corner and put it in my 8x10 picture frame and proudly have it on display on my counter along with my Pumpkins!




For my second one it was a little different, I only did one plain white foot print and my daughter was kind of jealous, one, because it was just one stinkin' foot. Two, because it was just plain white. I told her she will love it in the end. She sure did! For hers I cut the Pizza Box in half taped the edges together so it didn't unfold. Then I painted it outside, with the black spray paint. When it was all dry, I painted my daughters foot white and stamped it on the pizza box. While that was drying, I made the bow and picked out buttons. When it was dry, again, I drew the letters BOO vertical down the side of the foot print with pencil so I had a template to glue the buttons.
I hot glued the buttons over the BOO, then did a 2nd Button Layer to make it more 3-Dimensional. I glued two small white buttons onto two larger black buttons to resemble eyes and glued them on, and a small black button to resemble a ghost mouth saying "Boo!" 
Then of course the 2 large purple buttons with a smaller offset color purple to make the Bow.
I then poked 2 holes on the top of the box and laced the shoelace through to make a hanger. Then I finished it off by gluing the bow I made at the top and *Voila*!

Perfect Potato Salad

6-Medium Sized Potatos
4-Large Hard Boiled Eggs
1.5-2- Dill Pickles (Depending on you pickle Fancy!)
3/4- Can Of Olives (feed the other 1/4 to the kids, they love Olive Fingers!)
1/2c.- Mayonnaise
2tbsp- Mustard
Pickle Juice, Salt & Pepper To Taste.

Hardboil eggs by bringing to rapid boil for 7mins remove from heat & cover let sit for 12mins. Emerge instantly in cold water and peel shells. Stick in fridge.
Boil Potatoes for 17mins drain and run cold water. Peel skins and put potatoes in fridge for 2 hours.
Chop olives, pickles, potatoes and eggs and toss in a bowl. Add mayo and put mustard on top of mayo and pepper the mustard and a little drizzle of pickle juice. Mix the mayo & mustard up fore mixing the whole bowl up. Mix all together and enjoy! Love it! Good with white onions of you are an onion lover like me! Yum!

What's That Smell?!

My Sense Of Smell Is So Overwhelmed Right Now! The Savory Aroma Of My Beans Simmering Away In The Crock Pot. The Pungent Odor Of Garlic, The Bold Essence Of Bell Peppers & Onions, The Slight Sweet Yet Tangy Scent From The Tomatoes! The Sharp Lemony Perfume, From The Pine-Sol That I Just Mopped The Floors With. The Crisp Clean Smell Of Bleach Coming From The Laundry Area. Lastly But Not Least, The Sunny Citrus, Sweet & Fruit Kissed Fragrance Of The Scentsy That I Have Burning Throughout The Apartment. All Of It Smells So Amazing! Whirling & Swirling Through The Vents & Ducts As The Air Conditioner Kicks On & Mixes Cold, Crisp, Fresh Air Into My Breath. As I Sit Here, I Close My Eyes & Take A Deep Whiff As If I'm Breathing It All In With My Soul, To File It Away, So I May Smell It Another Day...<3

My Niece Has Arrived!<3 (One Of Them...)

My Brother & his Fiancée Welcomed their first child into the world on 4/23/12 at 4:41am! Baylee Nicole entered this world at 6lbs 6oz & 18.5ins long!
It was so beautiful! I was lucky enough to be in the room while she was delivered! It was amazing!
There was so much emotion when I saw her deliver & when I heard her first cries! I was crying too. 10 Little Fingers & 10 Little Toes, & an Auntie who loves her so incredibly much, she's just Perfect!
My Fiancées sister is due a week from today with her second child, a girl, another niece! I can't wait to meet Raegan Harper next week!
